Spotted Dog

300g/10oz plain flour

½ tsp salt

1 tsp bicarbonate of soda

3 tbsp caster sugar

100g/4oz mixed dried fruit

1 egg, beaten

200ml/7fl oz buttermilk

Takes 50 minutes • Serves 10–12

1 Preheat the oven to 190°C/Gas 5/fan oven 170°C. Butter a 1kg/2lb loaf tin. Sift the flour, salt and bicarbonate of soda into a mixing bowl. Stir in the sugar, make a well in the centre and add the dried fruit, egg and buttermilk. Mix lightly and quickly into the flour for a soft dough.

2 Using floured hands, remove the dough from the bowl and knead very briefly. Then press the dough into the prepared tin. Bake for 35–40 minutes until the top is a dark golden colour and the loaf feels firm to the touch. Turn out and leave to cool. Serve thickly sliced and buttered.
